Peat is an abundant natural resource in Ireland and until the 19th century it was used by several distilleries. It was gradually abandoned in favor of coal, which was cheaper and more accessible. Connemara reconnects with these ancient Irish traditions using 75% peaty barley for its single malt. This makes Connemara the only Irish distillery producing a Single Malt Tourbé. Unlike other Irish whiskeys, Connemara is made in double distillation in small stills, thus helping to broaden the aromatic range and character of this whiskey. The whiskey is then matured in American oak casks. The blend of malts of different ages gives Connemara the traditional sweetness and richness of Irish whiskeys. This limited series, available only in France, is the result of the blending of aged malts in two different types of barrels: Bourbon casks such as Connemara Original and sherry casks which provide a remarkably smooth supplement. Nose: peat edged by floral notes (heather and honeysuckle), honey and oak. Palate: round and silky. Honey, barley and fruits evolving towards peat, softened by vanilla. In the finale, notes of chocolate, vanilla and honey followed by a slow peat explosion that persists for a long time.
