The Carbasse - Domaine Sarda-Malet - Rivesaltes 2008
A black Grenache planted in 1945, on hillsides, by the grandfather, with plants from Châteauneuf du Pape. He was picked up between 30 September and 1 October by hand and returned to the cave in a crutch. The yield was less than 15 hectoliters per hectare. An alcoholic maceration of 10 days allowed to obtain a residual sugar of 75 gr. The tank was picked by hand and reassembled every day until the mutation was carried out on grains. The vessel was then filled and post-fermentation maceration began. It lasted 4 weeks without oxygen supply. Only the juices are preserved, there is nothing more to press. The bottling was done without filtration or sticking in October 2009.
