The process of creating Ron Centenario begins with a careful selection of sugar cane. A strong stem filled with a juicy tissue where the sugar is extracted. The tropical climate of Costa Rica, favored by the volcanic soil and the natural resources, are ideal conditions for the harvest of this plant. Every 15 months, the harvest takes place regularly during the summer. The stem is cut by hand and carried to the trapiche to extract the sweet nectar. The juice is subjected to a fermentation process where a special yeast transforms the sugar into alcohol and other products. Once the fermentation process is complete, Costa Rica's finest quality rum material is now ready to be purified by a distillation process that refines and separates all the different products obtained. One of the products of this distillation procedure is the young alcohol that is stored in fine white oak barrels initiating the aging process that gives Ron Centenario its exquisite aroma, unique flavor and the finest rum characteristics.
