Penfolds BIN 8 Cabernet Sauvignon - 2014
The choice is deliberate to create a contemporary and accessible Cabernet Shiraz, which can be drunk before its elder the Bin 389 Cabernet Shiraz. Bin 8 was designed in the traditional style of Penfolds. Ripe, balanced fruit aromas are supported by the softly integrated oak resulting in a soft, silky red wine. This wine was produced in response to the interest in the Cabernet Shiraz blend. A classic Australian style of wine that has attracted international media attention. The Bin numbers are given, originally, from the location of the bottling. Bin 8 uses the oldest oak, previously used for Bin 128 Bin 28 and Bin 389. Climatic conditions: After a dry winter in South Australia, the vines lacked water in early spring. Burrowing was early in many areas and the wind during flowering was, in part, responsible for low yields, lower than average. Hot days in October, November and early January contributed to the early start of the 2013 crop. The harvests were short and condensed. With warm, dry weather, Shiraz and Cabernet have developed strong, structural tannins with great intensity and pleasant flavor.
