Manual harvest at full maturity. Reception on a sorting table, destemmed and stripped, put in vats, pre fermented in cold for 4 to 5 days. Traditional vinification with control of temperatures and long vatting with immersion of the hat of marc and when conditions are favorable initiation of malolactic fermentation. The vines are aged from 45 to 60 years, cut in goblet 6 runners with 2 eyes for the carignan and the Grenache, and in simple guyot 6 eyes for the syrah. Surface work for spring plowing, treatment for cryptogamic diseases in a reasoned way in order to preserve the environment.
