At the Château du Breuil, the apple is the center of the world. The mild and damp climate and the chalky soil of the Pays d'Auge allow the Château du Breuil to have the ideal conditions to successfully exploit the 22,000 apple trees he owns on the edge of the Château. The know-how and experience are the strengths of the Château du Breuil, which prefers to give priority to quality rather than quantity. And when the cider has reached its ultimum, the distillation can begin. The distillation campaign takes place at the beginning of the winter, until the following summer. To obtain a liter of Calvados with 100% alcohol, approximately 27 kg of apples are necessary, or a little more than 20 liters of cider with 5% alcohol. Unlike Calvados "AOC", the Calvados "AOC Pays d'Auge" comes exclusively from the double distillation of cider produced from apples of the Pays d'Auge region. The resulting Calvados is thus more refined, thanks to the superior quality of the apples produced by the soil specific to this region, and also by the elimination during the two distillations of the less noble parts of the alcohol. At Château du Breuil, is distilled exclusively from Calvados "AOC Pays d'Auge". Classified as a historic monument, the Castle has been completely restored by the current owners, who have been distilling spirits for three generations.
