Château Mouton Rothschild - Pauillac 2007

From the vegetative period and the maturation until the harvest, the 2007 vintage has been the focus of attention to lead the razors to maturity in good sanitary conditions. The winter, quite rainy, makes it possible to constitute good water reserves and the bud burst of the vine begins from the first days of April. This early vegetative growth is hard at an unusually hot and dry weather (16.4mm of rain and 16 ° C, compared to an average of 11.7 ° C usually). Flowering is recorded for all three varieties around May 26, with a fortnight of in advance, suggesting early harvest as in 1989 or 2003. A relatively cool summer slows the evolution of the reasons, but an exceptionally hot and dry September allows the berries to reach their full phenological maturity. At harvest, the grapes are healthy, the dandruff is thick, rich in tannins and anthocyanins.

Tasted at the Mouton-Rothschild vertical in London, the 2007 Mouton-Rothschild is inevitably going to have two tough acts to follow in the form of 2005 and 2006, although it puts in a very decent effort. Here it has a strong pencil lead scent on the nose. There is less fruit intensity than the 2006, dialed down not one but two or three notches, although it develops attractive undergrowth scents. The palate is actually reminiscent of a Graves. It feel well balanced, a little saline and quite earthy, though I noticed it tapering in towards the finish that might have been exaggerated, juxtaposed against other regal vintages. It is a Mouton that will drink earlier than others, though that is not necessarily a bad thing for those that prefer not to wait forever. Tasted May 2016.

This Mouton is starting to show the complexity of an aged Mouton with truffles, dried strawberries and cherries. Full body, firm tannins and flavors of sous bois and mushrooms, which make this really quite sexy. Better in a year or two but so complete now.

Every time I taste the 2007 Mouton-Rothschild, I like it less and less. It is beginning to display a monolithic, slightly astringent and attenuated character along with medium-bodied blackcurrant fruit intermixed with hints of tobacco leaf, herbs and a notion of oak. The wine finishes medium-bodied with a slight hollowness. Drink it over the next 10-15 years.

Good deep red-ruby. Plum, currant, graphite, dark chocolate and potpourri spices on the sexy nose. Dense, sweet, suave and deep, with insidious intensity to the complex flavors of blackberry, tobacco leaf and graphite. Wonderfully silky and sweet for the vintage, finishing with very fine-grained tannins and lingering lead pencil and tobacco leaf flavors. The 2007 vintage doesn't get any better than this.

Composed of 81% Cabernet Sauvignon and 19% Merlot, the deep purple-colored 2007 Mouton reveals sweet aromas of creme de cassis, subtle oak, and flowers. Medium to full-bodied and elegant with sweet tannin as well as flavors and a texture that build incrementally on the palate, this strong effort should evolve over the next 15 years. Drink 2010-2025.

(an 81/19 blend of cabernet sauvignon and merlot) Medium ruby. Aromas of cassis, licorice, graphite, chocolate, menthol and flowers, lifted by a light peppery note. Dense, sweet and round, with a lovely mineral pungency accentuating the impression of terroir There's nothing hard about this suave, voluminous wine, which comes across as richer and lusher than its 12.7% alcohol would suggest. The slow-building finish features subtle minerally persistence.

Tiefdunkles Rubingranat, jugendliche Reflexe, violetter Rand. In der Nase zart rauchig unterlegte dunkle Beerenfrucht, etwas cassis und Orangenzesten, mineralisch Komponenten. Am Gaumen saftig und komplex, gute Struktur mit festen Tanninen, wiederum sehr mineralisch, bleibt gut haften, zarte Weichselnote im Nachhall, gute Länge. Im Moment ist noch alles von einer schwarzen Holznote umrahmt, die natürlich noch ein wenig bitter wirkt, mit dem weiteren Fassausbau aber verschwinden wird.

Nez de rose, cerise, bouche bien dense, plein, tannique, riche, gras, ample, bien rond, concentré, d'un bloc. S'il s'affine à l'élevage, il devrait faire une très belle bouteille.

Dégusté au château. Cette année encore, Mouton a probablement produit le vin le plus parfait sur le plan formel de tout le Médoc. Cette perfection est d’abord celle des sensations tactiles, avec une prise de bois magique qui donne aux grandes saveurs de cèdre et de havane des cabernets une délicatesse et des dégradés qu’on ne retrouve nulle part ailleurs, et surtout celle de la fin de bouche, d’une allonge et d’une pureté magistrales. Pour mieux faire comprendre cette perfection formelle aux amateurs, il faut avoir recours sans doute à des analogies empruntées à la musique : le timbre de ce Mouton développe tout simplement une plus grande richesse harmonique que tous les autres. C’est aussi la plus petite production de grand vin de l’histoire récente du château !

Upon first pouring – very little. But after five minutes it develops quite a precocious nose with ripe blackberries, a touch of dark chocolate, smoke and sous-bois. Very well defined. The palate is full-bodied with firm, dense, ripe tannins; very harmonious and excellent delineation. It does not have the depth of a great Mouton-Rothschild, but it is very focused with a much more reserved than usual finish with crisp blackberry, briary, cedar and a touch of black plum. What I like is the lingering aftertaste that exhibits great purity and refinement. Bon Vin – one of the finest Mouton’s of recent years. Tasted April 2008.

Deep purple and light nose – you do have to concentrate to find the first growth nature of this. Dense with a dry finish and some fine tannins. Just a little dilute but the fruit is ripe enough (even if the tannins aren’t quite). Almost opulent – certainly good round fruit. Just a bit stringy on the finish. Cool and light after the 2006… Big mistake to serve the 2006 alongside! So much more there …

Superb black-red colour, pronounced blackcurrant fruit but more restrained than usual, much less intense and less exotic than 2005 and 2006, but has a greater clarity and precision than the wines of the 1990s, due to the work in the vineyards, just a 'grand' Mouton in a minor key that will gived enormous pleasure in the medium term. Drink 2014-22.

Wonderful perfumes of flowers, currant, blackberry and violet. Full-bodied, with very fine tannins and a caressing texture. Long and balanced. Very, very pretty. —J.S.
